- 4 green chili peppers
- 1 package of tofu
- Vegetable oil
- 10g cayenne papper
- 10g soy sauce
- 5g oyster sauce
- 3 cloves of garlic, minced and chopped
- 10g balsamic vinegar
- Wash the green chilis. Remove the stems and cut down the length of the chilis into 2-3 pieces. Gently flatten them with a rolling pin so they are slightly soft.
- Prepare the sauce by combining 4 tablespoons soy sauce, 1 tablespoon oyster sauce, a small spoonful of sugar, a small spoonful of salt, 5g balsamic vinegar and some water. Mix well and adjust amounts to taste.
- Heat a wok without oil. Fry the chili peppers and cayenne papper over medium-low heat, turning occasionally, until lightly charred on both sides. Remove from wok and set aside.
- Heat the wok again and add oil. When the oil is hot, add the minced garlic and stir fry briefly until fragrant.
- Add the mixture of chilis and tofu strips. Toss to coat and mix well.
- Pour in the prepared sauce. Cover and let simmer until peppers and tofu are cooked through. Halfway through, uncover and turn ingredients, then recover and continue simmering.
- When peppers and tofu have absorbed flavors and sauce has reduced, remove from heat. Pour remaining sauce in wok over top. Garnish with chopped green onions.
